Eggs are an inexpensive source of protein that is easy to cook in various ways: boiled, scrambled, poached, fried with olive oil, or bacon grease. You can even bake eggs in an omelet. All you need is a skillet and some vegetables, like onions, tomatoes, green pepper, spinach, or other greens. Toss the veggies into the skillet with a little bit of butter or olive oil over medium heat until they start to soften up.

Then pour in beaten eggs, tilting the pan so the egg mixture covers it all evenly. Season as desired (i.e., salt and pepper) then cook on one side for about 3 minutes before flipping it over with a spatula and cooking for another 2-3 minutes on the other side. Sprinkle on fresh herbs (such as parsley), if you have them handy for extra flavor!
